Nekot ... the #1 cookie in the early 20th Century, Token. Mr. Lance tried to buy it, was told he didn't have enough money. He already had a plant that made super-good peanut butter, he'd grown them on the farm as a kid, knew the product. He went back to his office, designed a similar cookie, named it Nekot. Token cookies soon disappeared, Nekot has been around, grown in popularity ever since.I love shortbread cookies, and peanut butter. Your call: do you scrape off the peanut butter and eat it first, or keep it on the cookie.I often send them as gifts: nobody else does, and nobody has ever objected.
